Garlic & Parmesan Roasted Sweet Potatoes

  • 2 pounds sweet potatoes
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes.
  3. In a large bowl, combine sweet potatoes, garlic, olive oil, salt, pepper, and thyme.
  4. Toss until sweet potatoes are well coated.
  5. Spread the sweet potatoes in a single layer on a baking sheet.
  6. Roast in the preheated oven for about 25-30 minutes, or until tender.
  7. Sprinkle Parmesan cheese on top and return to the oven for an additional 5 minutes.
  8. Serve warm.
