  • 1 cup diced turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy.
  2. Add onions and garlic, sauté until softened.
  3. Stir in diced potatoes, thyme, and chicken broth.
  4. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  5. Blend the soup until smooth, then return to pot.
  6. Stir in heavy cream and season with salt and pepper.
