Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla.
  4. Gradually mix in the dry ingredients until just combined.
  5. In a separate bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  6. Drop tablespoonfuls of cookie dough onto the prepared baking sheet, then press a small indentation in the center of each.
  7. Fill each indentation with a dollop of the cream cheese mixture.
  8. Bake for 10-12 minutes, or until the edges are set and lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
