  • 1 pound chicken breast, diced

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add diced chicken, oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, olives, red onion, and parsley.
