Greek Cucumber Salad

This Greek Cucumber Salad is a light and refreshing dish perfect for hot summer days.

Ingredients

  • 3 large cucumbers
  • 1 red onion
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese
  • 1/4 cup fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash and slice the cucumbers into thin rounds.
  2. Finely chop the red onion and add to the bowl.
  3. Halve the cherry tomatoes and add them.
  4. Add the Kalamata olives and crumble the feta cheese on top.
  5. Chop the fresh parsley and sprinkle over the salad.
  6. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled.

Notes

  • This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
  • Feel free to add other vegetables like bell peppers or avocado.
