Greek Lemon Chicken Soup

A traditional Greek soup that combines zesty lemon with tender chicken for a comforting meal.

Ingredients

  • 4 cups chicken broth
  • 1 cup cooked shredded chicken
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1/2 cup rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add chicken broth and bring to a boil. Stir in rice and cook until tender.
  3. Add shredded chicken, salt, and pepper.
  4. In a bowl, whisk together eggs and lemon juice. Gradually add a ladle of hot soup to the egg mixture, then pour it back into the pot.
  5. Stir well and heat through; do not boil.
  6. Remove from heat, garnish with parsley, and serve hot.

Notes

  • For a thicker soup, add more rice.
  • Serve with crusty bread for a wholesome meal.
