Greek Lemon Chicken Soup

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 1 celery stalk, sliced
  • 2 garlic cloves, minced
  • 1/2 cup lemon juice
  • 2 large eggs
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until softened.
  2. Add garlic and cook for 1 minute.
  3. Pour in chicken broth and bring to a boil.
  4. Add shredded chicken and simmer for 10 minutes.
  5. In a bowl, whisk together eggs and lemon juice.
  6. Temper the egg mixture with a little hot broth, then stir back into soup.
  7. Add dill, season with salt and pepper, and serve hot.

  • For a creamy version, add a splash of heavy cream.
