Ground Turkey Stuffed Peppers

A delicious and easy recipe for ground turkey stuffed peppers that the whole family will love.

Ingredients

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup rice, cooked
  • 1 can black beans, drained
  • 1 cup corn, frozen
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat. Add the ground turkey, and cook until browned.
  4. Mix in the cooked rice, black beans, corn, cumin, paprika, and half of the salsa.
  5. Stuff the mixture into each pepper and place in a baking dish.
  6. Pour the remaining salsa over the stuffed peppers and top with cheese.
  7. Bake for 25-30 minutes until the peppers are tender.

Notes

  • Feel free to add your favorite spices for extra flavor.
  • These can be made ahead of time and frozen.
