1 onion chopped
2 cloves garlic minced
3 carrots sliced
2 stalks celery chopped
4 cups vegetable broth
1 cup frozen peas
2 cups fresh spinach
1 package (9 ounces) tortellini
1 cup heavy cream
1 teaspoon Italian seasoning
Salt to taste
Black pepper to taste
Instructions
Heat olive oil in the slow cooker. Add onion and garlic, sauté until translucent.
Add carrots, celery, and vegetable broth. Cover and cook on low for 6-8 hours.
Stir in peas and spinach 30 minutes before serving.
Add tortellini and heavy cream, cook for another 10-15 minutes until tortellini is tender.
Season with Italian seasoning, salt, and pepper before serving.
