- 2 ripe bananas
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup milk
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts or chocolate chips (optional)
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas.
- Add the rolled oats, baking powder, baking soda, salt, and ground cinnamon to the mashed bananas and mix well.
- In another bowl, whisk together the milk, honey or maple syrup, eggs, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and stir until just combined.
- If desired, fold in the chopped walnuts or chocolate chips.
- Evenly distribute the muffin batter into the prepared muffin tin.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for a few minutes before serving.
