Hearty Cheddar Garlic Herb Potato Soup Recipe

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • salt and pepper to taste

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and chop.
  2. Add onion and garlic to the pot, sauté until soft.
  3. Add diced potatoes and chicken broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream, cheddar cheese, thyme, and parsley.
  6. Cook until cheese is melted and soup is heated through.
  7. Season with salt and pepper, then stir in chopped turkey bacon before serving.

Notes

  • This soup can be made ahead of time and stores well.
  • For a lighter version, substitute half and half for heavy cream.
