Hearty Cheddar Garlic Herb Potato Soup

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the potatoes and broth, and bring to a boil. Cook until the potatoes are tender.
  3. Stir in the cream, cheese, thyme, salt, and pepper.
  4. Simmer until the cheese is melted and the soup is heated through.
  5. Serve warm, topped with crumbled turkey bacon.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream.
