- 4 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup turkey bacon, cooked and crumbled
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt to taste
- Black pepper to taste
- In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add diced potatoes, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese, mix until cheese is melted and soup is creamy.
- Serve hot, topped with crumbled turkey bacon.
Notes
- For a vegetarian version, substitute turkey bacon with mushrooms or skip the meat altogether.
- Leftover soup can be thickened by blending part of it and mixing it back in.
