Hearty Cheddar Garlic Herb Potato Soup Recipe

A creamy and luscious potato soup enriched with cheddar cheese, garlic, and herbs, topped with crispy turkey bacon for a delightful finish.

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  2. Add diced potatoes, chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. Stir in heavy cream and cheddar cheese, mix until cheese is melted and soup is creamy.
  4. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a vegetarian version, substitute turkey bacon with mushrooms or skip the meat altogether.
  • Leftover soup can be thickened by blending part of it and mixing it back in.
