  • 8 ounces fettuccine
  • 1 pound shrimp, peeled and deveined
  • 4 ounces Velveeta cheese, cubed
  • 4 slices turkey bacon, chopped
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and turkey bacon, cooking until crispy.
  2. Add onion, bell pepper, and garlic; sauté until softened.
  3. Stir in shrimp and Cajun seasoning, cooking for 2-3 minutes until shrimp begins to pink.
  4. Pour in chicken broth and add fettuccine. Close lid, set to manual high pressure for 3 minutes.
  5. Once done, perform a quick release. Stir in Velveeta and heavy cream until creamy.
  6. Serve hot, garnished with parsley if desired.

Notes

  • For a spicier dish, add more Cajun seasoning to taste.
  • Leftover fettuccine can be reheated in the microwave.
