Italian Penicillin Soup

  • 6 strips turkey bacon
  • 1 cup chicken ham, diced
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop into pieces.
  2. Add the onion, carrots, and celery to the pot and sauté until soft.
  3. Stir in the chicken ham and cook for a few minutes.
  4. Add the chicken broth, thyme, and bay leaf. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes. Season with salt and pepper.
  6. Serve hot, garnished with chopped turkey bacon.
