  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup pasta (your choice)
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. Sauté the onion, carrots, and celery in the same pot until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the diced tomatoes, oregano, and basil.
  5. Bring to a boil, then add the pasta and cook until al dente.
  6. Stir in the spinach and the cooked sausage and simmer for a few more minutes.
  7. Season with salt and pepper to taste before serving.

Notes

  • This soup is perfect for meal prep and can be made ahead of time.
  • Feel free to add other vegetables like bell peppers or zucchini.
