- 1 pound Italian sausage
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 cup pasta (your choice)
- 2 cups spinach, chopped
- Salt and pepper to taste
- In a large pot, cook the Italian sausage over medium heat until browned. Remove and set aside.
- Sauté the onion, carrots, and celery in the same pot until softened.
- Add garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and add the diced tomatoes, oregano, and basil.
- Bring to a boil, then add the pasta and cook until al dente.
- Stir in the spinach and the cooked sausage and simmer for a few more minutes.
