- 1 pound boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 lemons, juiced and zested
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups spinach, fresh
- 1/4 cup fresh parsley, chopped
- In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
- Add the onion, carrots, and celery to the pot. Sauté until the vegetables are softened.

- Return the chicken to the pot and add the orzo, lemon juice, lemon zest, thyme, salt, and pepper.
- Reduce heat and let simmer until the chicken is cooked through and orzo is tender.
- Remove the chicken, shred it, and return it to the pot.
- Stir in fresh spinach and parsley before serving.
