Lemon Chicken Orzo Soup

A comforting and hearty lemon chicken orzo soup that is perfect for cold days.

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup orzo pasta
  • 2 lemons, juiced and zested
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups spinach, fresh
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
  2. Add the onion, carrots, and celery to the pot. Sauté until the vegetables are softened.
  3. Stir in the garlic and cook for another minute.
  4. Pour in the chicken broth and bring to a boil.
  5. Return the chicken to the pot and add the orzo, lemon juice, lemon zest, thyme, salt, and pepper.
  6. Reduce heat and let simmer until the chicken is cooked through and orzo is tender.
  7. Remove the chicken, shred it, and return it to the pot.
  8. Stir in fresh spinach and parsley before serving.

Notes

  • For extra flavor, you can add additional herbs like rosemary or dill.
  • Adjust the thickness of the soup by adding more broth or water if desired.
