Lentil Sloppy Joes

A delicious and hearty vegetarian alternative to traditional sloppy joes using lentils.

Ingredients

  • 1 cup lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup tomato sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Rinse lentils and cook according to package instructions.
  2. In a skillet, heat olive oil over medium heat.
  3. Add onion, garlic, and bell pepper. Sauté until soft.
  4. Add cooked lentils, tomato sauce, brown sugar, Worcestershire sauce, chili powder, smoked paprika, salt, and pepper.
  5. Simmer for 10 minutes.
  6. Serve on buns or over rice.

Notes

  • For a spicier version, add jalapeños.
  • These are great served with a side salad.
