- 2 tablespoons olive oil
- 4 boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 8 ounces fettuccine pasta
- 2 cups spinach, fresh
- 1/2 cup sun-dried tomatoes
- 1/4 cup basil, fresh, chopped
- Cook the fettuccine according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Cook the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet and let rest.
- In the same skillet, add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
- Add spinach and sun-dried tomatoes, cooking until spinach is wilted. Stir in the cooked fettuccine.
- Slice the chicken and place on top of the pasta. Garnish with fresh basil.
