Middle-of-Winter Creamy Tomato Soup

A warm and comforting creamy tomato soup with turkey bacon, perfect for the cold weather.

Ingredients

  • 4 cups canned crushed tomatoes
  • 1 cup heavy cream
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken broth

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add the chopped onion and garlic to the pot and sauté until soft.
  3. Pour in the crushed tomatoes and chicken broth, then stir in the basil, salt, and pepper.
  4. Bring to a simmer and cook for 15 minutes.
  5. Add the heavy cream and stir until well combined. Cook for an additional 5 minutes.
  6. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a spicier kick, add some red pepper flakes.
  • Substitute the heavy cream with coconut milk for a dairy-free version.
