Mushroom Spinach Lasagna

A delicious and comforting Mushroom Spinach Lasagna that is easy to prepare for family meals.

Ingredients

  • 9 lasagna noodles lasagna
  • 2 cups spinach
  • 2 cups mushrooms, sliced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 jar marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, sauté mushrooms until soft. Add spinach and cook until wilted.
  4. In a bowl, mix ricotta cheese with garlic powder, onion powder, and Italian seasoning.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer noodles, ricotta mixture, sautéed mushrooms and spinach, mozzarella, and marinara sauce. Repeat layers, finishing with noodles and sauce on top.
  7. Sprinkle parmesan cheese over the top.
  8. Bake covered with foil for 25 minutes, then uncover and bake for an additional 15 minutes until bubbly and golden.
  9. Let cool for 10 minutes before slicing and serving.

Notes

  • Pair with a side salad for a complete meal.
  • This lasagna can be made ahead and refrigerated or frozen.
