Peaches and Cream Crumble Bars

  • 2 cups fresh peaches, sliced
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a bowl, mix the sliced peaches with brown sugar and vanilla extract. Set aside.
  3. In another bowl, combine flour, oats, granulated sugar, melted butter, cinnamon, and salt until crumbly.
  4. Spread half of the crumble mixture in the bottom of the prepared baking dish.
  5. Layer the peach mixture over the crumb base, then sprinkle the remaining crumble on top.
  6. Bake for 30-35 minutes, or until golden brown.
  7. Allow to cool before slicing into bars.
