  • 1/2 cup almond butter
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large bowl, mix together pumpkin purée, almond butter, honey or maple syrup.
  2. Add rolled oats, cinnamon, and nutmeg. Mix until well combined.
  3. If desired, fold in chocolate chips.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
  6. Store in an airtight container in the fridge.
