  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, cream the butter with granulated and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until combined.
  5. Stir in pumpkin puree.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Drop tablespoons of dough onto the prepared baking sheets, spacing them apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let cookies cool on the baking sheet before transferring to a wire rack.
  10. For the frosting, beat the softened cream cheese with powdered sugar and vanilla until smooth.
  11. Frost the cooled cookies with cream cheese frosting.
