  • 1 pound boneless chicken thighs
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pan, melt the butter over medium heat. Add the chopped onion and sauté until soft.
  2. Add garlic and ginger, and cook for another minute.
  3. Stir in the chicken thighs and cook until browned on all sides.
  4. Add coconut milk, garam masala, turmeric, and paprika. Stir to combine.
  5. Bring to a simmer and cook for 15-20 minutes until chicken is cooked through.
  6. Season with salt and pepper to taste. Serve hot.
