RITZ CHICKEN AND RICE CASSEROLE

A delicious and easy-to-make casserole that combines tender chicken, fluffy rice, and crispy Ritz crackers for a comforting meal.

Ingredients

  • 4 cups cooked rice
  • 2 cups shredded cooked chicken
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 3 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rice, chicken, cream of chicken soup, chicken broth, and mixed vegetables.
  3. Transfer the mixture to a greased casserole dish and top with cheddar cheese.
  4. In a separate bowl, mix the crushed Ritz crackers with melted butter and spread over the cheese layer.
  5. Bake for 30-35 minutes, until heated through and the top is golden brown.
