- 1 pound salmon fillet
- 2 cups sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 2 teaspoons salt
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 2 green onions, sliced
- 1 sheet nori, cut into strips
- Preheat the oven to 350°F (175°C).
- Rinse the sushi rice under cold water until the water runs clear.
- In a saucepan, combine sushi rice and water, bring to a boil, then reduce heat, cover and simmer for 18-20 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once the rice is cooked, stir in the vinegar mixture and let cool.
- While the rice cools, prepare the salmon by baking it in the preheated oven for about 15 minutes.
- In a separate bowl, combine mayo and sriracha to make the spicy sauce.
- Flake the cooked salmon and mix it with the spicy mayo.
- In a baking dish, layer sushi rice, followed by the salmon mixture. Sprinkle green onions on top.
- Bake in the oven for about 10-15 minutes, until heated through.
- Serve warm, garnished with nori strips.
Notes
- For extra flavor, add avocado slices on top before baking.
