Shredded Beef Enchiladas

Delicious shredded beef enchiladas that are easy to prepare and perfect for any occasion.

Ingredients

  • 2 cups shredded beef
  • 8 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, heat olive oil over medium heat. Add onions and sauté until soft.
  3. Add shredded beef, cumin, chili powder, and salt to the skillet and stir until well combined.
  4. In a separate bowl, mix enchilada sauce with half of the shredded cheese.
  5. Soften corn tortillas by heating them briefly in the microwave.
  6. Fill each tortilla with the beef mixture, roll them up, and place them seam side down in a baking dish.
  7. Pour the enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.

Notes

  • For extra flavor, add black beans or corn to the filling.
  • Garnish with fresh cilantro before serving.
