Simple Butternut Squash Soup

Ingredients

  • 1 medium butternut squash
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground nutmeg
  • 1 cup coconut milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half, scoop out the seeds, and drizzle with olive oil.
  3. Roast in the oven for 45 minutes or until tender.
  4. In a pot, heat olive oil and sauté onions and garlic until soft.
  5. Remove the squash from the oven, scoop out the flesh, and add to the pot.
  6. Pour in the vegetable broth and bring to a simmer.
  7. Add salt, pepper, and nutmeg, and cook for 10 minutes.
  8. Blend the soup until smooth and stir in the coconut milk.
  9. Serve warm with a drizzle of olive oil.
