- 1 medium butternut squash
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon ground nutmeg
- 1 cup coconut milk
- Preheat the oven to 400°F (200°C).
- Cut the butternut squash in half, scoop out the seeds, and drizzle with olive oil.
