Slow Cooker Beef Ragu

Ingredients

  • 2 pounds beef chuck roast
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 pound pasta of choice

Instructions

  1. In a skillet, heat olive oil over medium heat. Brown the beef on all sides.
  2. Transfer the beef to the slow cooker. Add onion, garlic, crushed tomatoes, tomato paste, beef broth, oregano, basil, salt, and pepper.
  3. Cook on low for 8 hours or until beef is tender.
  4. Remove the beef, shred it, and return to the sauce.
  5. Serve over cooked pasta.
