A hearty and flavorful slow cooker chicken stew featuring tender chicken and crispy turkey bacon, perfect for chilly evenings.

  • 1 pound chicken thighs
  • 4 strips turkey bacon
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup peas

Instructions

  1. In a slow cooker, layer the chicken thighs on the bottom.
  2. Add the chopped carrots, celery, onion, and garlic over the chicken.
  3. Cook the turkey bacon until crispy, then crumble and add to the slow cooker.
  4. Pour in the chicken broth, then sprinkle with thyme, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is cooked through.
  6. During the last 30 minutes, add the peas.
  7. Shred the chicken with two forks before serving.

Notes

  • For a thicker stew, mix in a cornstarch slurry during the last hour of cooking.
