- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (28 ounces) diced tomatoes
- 4 cups chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 lime, juiced
- 1 cup tortilla strips
- 1 cup shredded cheese (optional)
- 1/4 cup fresh cilantro, chopped (optional)
- In a slow cooker, add the chicken breasts, olive oil, onion, garlic, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, paprika, and cayenne pepper.
- Stir to combine and cover the slow cooker with the lid.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once the chicken is cooked, shred it using two forks, and return it to the soup.
- Stir in the lime juice and tortilla strips before serving.
- Garnish with cheese and cilantro if desired.
