Slow Cooker Chicken Tortilla Soup

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (28 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1 lime, juiced
  • 1 cup tortilla strips
  • 1 cup shredded cheese (optional)
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions

  1. In a slow cooker, add the chicken breasts, olive oil, onion, garlic, black beans, corn, diced tomatoes, chicken broth, chili powder, cumin, paprika, and cayenne pepper.
  2. Stir to combine and cover the slow cooker with the lid.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Once the chicken is cooked, shred it using two forks, and return it to the soup.
  5. Stir in the lime juice and tortilla strips before serving.
  6. Garnish with cheese and cilantro if desired.

Notes

  • This soup can be made a day in advance and tastes even better the next day.
