  • 1 cup beef broth
  • 1 can diced tomatoes
  • 1 tablespoon olive oil
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground beef and cook until browned.
  3. Stir in chili powder, garlic powder, onion powder, cumin, salt, and black pepper.
  4. Add beef broth and diced tomatoes to the skillet, then stir in rice.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  6. Once rice is cooked, fluff with a fork and serve in bowls, topped with shredded cheese and parsley.
