Spinach Ricotta Stuffed Shells with Basil Vodka Sauce

Delicious spinach and ricotta stuffed shells topped with a creamy basil vodka sauce.

Ingredients

  • 12 large pasta shells
  • 2 cups ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 cup mozzarella cheese, shredded
  • 1 tablespoon fresh basil, chopped
  • 2 cups basil vodka sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the pasta shells according to the package instructions until al dente. Drain and set aside.
  3. In a bowl, combine ricotta cheese, spinach, Parmesan cheese, mozzarella cheese, and basil. Mix well.
  4. Stuff each shell with the cheese mixture and place in a baking dish.
  5. Pour the basil vodka sauce over the stuffed shells.
  6. Bake for 25 minutes or until the cheese is bubbly.

Notes

  • Feel free to add more cheese on top before baking for a cheesier dish.
  • For a spicier version, add red pepper flakes to the filling.
