Strawberry Shortcake Cake

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 4 cups fresh strawberries, sliced
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine flour and baking powder; gradually add to the creamed mixture alternately with milk.
  6. Pour into prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Allow cakes to cool completely.
  9. For the frosting, whip the heavy cream and powdered sugar until stiff peaks form.
  10. Layer the cakes with whipped cream and sliced strawberries in between.
  11. Top with more strawberries and cream.

Notes

  • Use fresh strawberries for the best flavor.
  • Let the cake chill in the refrigerator for a few hours before serving for enhanced flavor.
