  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 6 slices turkey bacon
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup shredded cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy, then chop it into small pieces.
  4. In a large bowl, combine the ground turkey, cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, chopped turkey bacon, salt, and pepper.
  5. Stuff each bell pepper with the turkey mixture and place them in a baking dish.
  6. Top each stuffed pepper with shredded cheese.
  7. Bake in the preheated oven for about 30-35 minutes or until the peppers are tender and the cheese is melted.

Notes

  • Feel free to add your favorite vegetables to the filling mixture.
  • These peppers can be made ahead of time and stored in the fridge before baking.
