  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt to taste
  • 1 avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes, then toss them in a bowl with olive oil, cumin, chili powder, garlic powder, and salt.
  3. Spread the sweet potatoes on a baking sheet and roast for 20-25 minutes or until tender.
  4. In a pan, heat the black beans and corn until warmed through.
  5. Assemble the taco bowls with roasted sweet potatoes, black beans, corn, avocado slices, cilantro, and a squeeze of lime juice.
