Ingredients

  • 2 sweet potatoes
  • 1 can black beans
  • 1 cup corn
  • 1 avocado
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 8 corn tortillas

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with chili powder, cumin, and salt.
  3. Spread them on a baking sheet and roast for 25-30 minutes.
  4. In a pan, warm the black beans and corn.
  5. Assemble the taco bowls with roasted sweet potatoes, black beans, corn, and sliced avocado on top of tortillas.
