  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups carrots, chopped
  • 2 cups parsnips, chopped
  • 2 cups sweet potatoes, diced
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the carrots, parsnips, and sweet potatoes with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 25-30 minutes.
  4. In a pot, sauté the onion and garlic until translucent.
  5. Add the roasted vegetables and vegetable broth to the pot.
  6. Season with thyme and rosemary and bring to a boil.
  7. Reduce heat and simmer for 15 minutes.
  8. Blend the soup until smooth.
  9. Serve hot.
