Thai Chicken Curry Soup

  • 1 tablespoon vegetable oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups chicken broth
  • 1 can coconut milk
  • 1 cup carrots, sliced
  • 1 cup bell pepper, chopped
  • 2 cups spinach leaves
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a pot over medium heat.
  2. Add chicken and cook until no longer pink.
  3. Stir in onion, garlic, and ginger.
  4. Add red curry paste and cook for another minute.
  5. Pour in chicken broth and coconut milk.
  6. Add carrots and bell pepper, simmer until vegetables are tender.
  7. Stir in spinach, lime juice, and fish sauce.
  8. Serve hot and garnish with fresh cilantro.

Notes

  • Adjust the spice level by adding more or less curry paste.
