Thai Chicken Noodle Soup

  • 1 pound chicken breast
  • 8 ounces rice noodles
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, cook the chicken breast over medium heat until no longer pink, then shred.
  2. Prepare the rice noodles according to the package instructions and set aside.
  3. In the same pot, add chicken broth, coconut milk, red curry paste, fish sauce, and lime juice. Stir to combine.
  4. Add mixed vegetables to the pot and let simmer for 5-7 minutes.
  5. Mix in the cooked noodles and shredded chicken, and heat through.
  6. Serve hot, garnished with fresh cilantro and lime wedges.

Notes

  • Adjust the spice level by adding more or less curry paste.
  • For a vegetarian version, substitute chicken with tofu and use vegetable broth.
