The Best Coconut Cream Pie

  • 1 ½ cups coconut milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • ⅓ cup cornstarch
  • ½ teaspoon salt
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 pre-baked pie crust

Instructions

  1. In a saucepan, combine coconut milk, heavy cream, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until the mixture thickens.
  2. In a bowl, whisk the egg yolks. Gradually add a small amount of the hot mixture to the egg yolks, whisking continuously to temper the yolks.
  3. Pour the egg mixture back into the saucepan. Continue cooking for another 2-3 minutes until thickened.
  4. Remove from heat and stir in vanilla extract and shredded coconut.
  5. Pour the filling into the pre-baked pie crust. Refrigerate for at least 4 hours before serving.

Notes

  • For an extra coconut flavor, use toasted coconut on top as a garnish.
  • Make sure to let the pie cool completely before refrigerating to set.
