Tortellini and Sausage Soup

This hearty tortellini and sausage soup is the perfect comfort food for chilly nights.

Ingredients

  • 1 pound Italian sausage
  • 4 cups broth
  • 1 package tortellini
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic, sauté until fragrant.
  3. Cook the sausage until browned.
  4. Pour in the broth and bring to a simmer.
  5. Add tortellini and cook according to package instructions.
  6. Stir in spinach and season with Italian seasoning, salt, and pepper.
  7. Simmer until the spinach is wilted. Serve hot.

Notes

  • Add more or less spinach depending on your preference.
