Tortellini Carbonara

A deliciously creamy tortellini carbonara made with turkey bacon for a lighter twist.

  • 12 ounces cheese tortellini
  • 4 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and cook the chopped turkey bacon until crispy.
  3. Add minced garlic to the skillet and sauté for 1 minute.
  4. In a bowl, whisk together eggs, Parmesan cheese, and heavy cream.
  5. Remove the skillet from heat and add the cooked tortellini, followed by the egg mixture, stirring quickly to coat the pasta.
  6. Season with salt and pepper to taste, and serve immediately.

Notes

  • For a richer flavor, you can substitute pancetta for turkey bacon.
  • Add peas or spinach for extra vegetables.
