- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- 8 ounces milk chocolate, chopped
- 8 ounces white chocolate, chopped
- 4 large eggs, separated
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- In a saucepan, heat 1/2 cup of heavy cream until it begins to simmer. Remove from heat and add the dark chocolate, stirring until smooth.
- In another bowl, melt the milk chocolate in a similar manner, then set aside to cool.
- Repeat with white chocolate.
- In a separate bowl, beat the egg yolks and sugar until thick and pale. Mix in the melted chocolates and vanilla.
- In a clean bowl, whip the remaining heavy cream until soft peaks form, then fold into the chocolate mixture.
- In another bowl, whip the egg whites with salt until stiff peaks form, and gently fold into the mixture.
- Layer the mousse in a cake pan and refrigerate for at least 4 hours before serving.
