Turkey Stuffed Peppers

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, sauté onion and garlic until translucent.
  4. Add ground turkey to the skillet and cook until browned.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff each bell pepper with the turkey mixture.
  7. Place stuffed peppers in a baking dish and cover with foil.
  8. Bake for 30 minutes, then remove foil and sprinkle cheese on top.
  9. Bake for another 10-15 minutes until cheese is melted.

Notes

  • For added flavor, you can use pepper jack cheese.
  • Feel free to add more vegetables to the stuffing mixture.
