Tuscan White Bean Soup

A delicious and easy-to-make Tuscan White Bean Soup that combines the rich flavors of turkey bacon and white beans.

  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups kale, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and crumble when cool.
  2. Add the chopped onion and garlic to the pot, sautéing until soft and translucent.
  3. Pour in the vegetable broth and add the white beans, diced tomatoes, oregano, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, stirring occasionally.
  5. Add the chopped kale and cook for an additional 5 minutes until wilted.
  6. Serve hot, topped with crumbled turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon and use a vegetarian broth.
  • This soup can also be garnished with fresh parsley or grated Parmesan cheese.
