Ultimate Chicken Pot Pie Casserole

A delicious twist on a classic dish featuring turkey bacon and a creamy chicken filling.

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and chopped
  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1/2 cup celery, chopped
  • 1/4 cup onion, diced
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the chicken broth and heavy cream over medium heat.
  3. Whisk in the flour until smooth.
  4. Add the chicken, turkey bacon, peas, carrots, celery, onion, garlic powder, thyme, salt, and pepper. Stir until well combined.
  5. Pour the mixture into a greased baking dish.
  6. Cover with pie crust and seal the edges.
  7. Cut slits in the crust to allow steam to escape.
  8. Bake for 30-35 minutes or until the crust is golden brown.
  9. Let it cool for a few minutes before serving.

Notes

  • Feel free to substitute other vegetables based on your preference.
  • To make it lighter, use low-fat cream or chicken broth.
