This Vegetable Soup Delight with turkey bacon is a comforting, hearty meal perfect for chilly days.

Ingredients

  • 4 strips turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 zucchini, diced
  • 1 cup green beans, trimmed and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach, fresh

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add olive oil, onion, carrots, and celery to the pot and sauté until softened.
  3. Stir in the garlic and cook for another minute.
  4. Add the broth, diced tomatoes, zucchini, green beans, thyme, and basil.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper, then stir in fresh spinach just before serving.
  7. Garnish with crumbled turkey bacon on top.

Notes

  • This soup can be easily customized with your favorite vegetables.
  • For a vegan option, omit the turkey bacon.
