  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups green beans, trimmed and chopped
  • 2 cups zucchini, diced
  • 1 cup frozen peas
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté for 5 minutes.
  3. Stir in the garlic and thyme, cooking for another minute.
  4. Add the vegetable broth and diced tomatoes, bringing to a boil.
  5. Reduce heat, add green beans, zucchini, and peas, and let simmer for 20 minutes.
  6. Season with salt and pepper to taste before serving.
